This week we are blessed with lots of apricots. It seemed like everyone decided to bring us apricots – not complaining at all. These delicious fruits will  be always welcomed in our home. Eating apricots is very beneficial for our health, plus so pretty to look at. 

Apricots and health:

Apricots are a good source of dietary fiber, and it doesn’t matter if you eat them fresh or dried. They contain retinol, which is fat soluble, and makes the apricots dissolve easily which helps the nutrients to be absorbed faster and easier by our bodies.

Here are some of the health benefits of apricots: treat indigestion, constipation, earache, fever, skin diseases, cancers, and anemia, promote a healthy heart, treats muscles and wounds,reduce cholesterol levels, prompts healthy vision, help with weight loss, treat respiratory conditions, boost bone strength, and supports electrolyte balance, which is very important. You probably, also, noticed that there are lots of skin related products on the market that contain apricots – it does improve our skin tremendously. 

All of these benefits are possible because of the vitamins found in the apricots: vitamins A, C, K, E, and niacin in big amounts, plus other vitamins and minerals, like potassium, copper manganese, magnesium, and phosphorous. 

Yes, apricots are healthy and very tasty.

Today, I am sharing one of our beloved recipes of an apricot cake, which was gobbled up in no time (so fast that I couldn’t share any with other family members, who we saw the next day).

Isn’t it beautiful? And how tasty and yummy it was!!!

The recipe

It’s very easy to make, with almost no effort 🙂

Ingredients:

4 eggs
3/4 cup of sugar (175g)
1/2 cup olive oil
1 + 1/3 cup flour + 1 Tbsp for the apricots
1 + 1/3 tsp of baking powder
4 Tbsp of cornstarch
1/2 cup orange juice (120 ml)
5 apricots

Steps:

  1. Beat the eggs with sugar- 1/3 of sugar at a time. Beat until the eggs turn light. Add slowly the oil and orange juice- beat until combined.
  2. Mix the flour with baking powder and cornstarch and mix it with a spatula until incorporated.
  3. Cut the apricots and mix them with 1 Tbsp of flour.
  4. Mix in the apricots, and bake for 50 minutes @ 360*F.
