Avocado Truffles – these are the words to describe this delicious dessert. It is natural, not too sweet, and has an amazing texture. Anything else? Super easy to make and best of all is that kids love them.

I keep trying to keep our family on a healthy diet. This is a long journey and not an easy one for sure. Kids just seem to love anything unhealthy, and as soon as we offer them something that can do anything good to their bodies, they just tend to reject it. Now, I can’t complain about my kids, they are on a very healthy diet and don’t really complain about it. The only time they tend to complain is when we are visiting someone, or going to a restaurant because, of course, they want the coke everyone else is having.

It took a fairly long time to teach them the importance of the healthy diet. YouTube videos, reading books, magazines, answering two hundred times the same questions, finally paid back and they are just listening to us.

Avocado Truffles

There is no need for me to explain how great are avocados for our health: from lots of vitamins and dietary fiber to healthy fats – this is the fruit you want to snack on, add to cooking, and why not desserts!

Let’s get cooking now with these easy to find ingredients and steps.

Avocado – 2 pc, they need to be ripe
Dark chocolate – 1.5 cups
Vanilla extract – 1 tsp
Desiccated coconut – 1 cup (these are super dry and tiny coconut flakes)

You can adjust the recipe by how you like it. The original recipe didn’t call for coconut flakes, but after we tried it, no one really enjoyed it. I didn’t want to dispose such great ingredients and I decided to play around with some coconut flakes. The result amazed me and saved the recipe as well.

  1. Mash the avocados with an electric hand blender.
  2. Melt the chocolate.
  3. Mix together avocados, chocolate, vanilla extract, and coconut.
  4. Wrap and let it cool in the fridge for an hour.
  5. Shape the truffles and roll them in coconut, or cocoa powder.

That is it! Easy as promised, and super delicious. We ate all of them, so I can’t tell you how long would they last , but I would keep them in an airtight container in the fridge.
