Decadent Chocolate Chip Cheesecake with Cranberry Dunkers Base

I will start today’s post by telling you three things about me:
1. I love Cranberry and Oatmeal Dunkers from Trader Joe’s.
2. I love cheese cakes.
3. I love saving every bit of food, and try not to waste it.

The other day I was making my husband favorite cheesecake, and I had some filling left that I didn’t want to throw away; so this is how this cheesecake was born: unplanned and just because of some leftover cheesecake filling, some chocolate chips, and couple of cookies.

This is so easy to make, and let’s be honest here: who doesn’t like to make an easy cheesecake that is delicious and will make others think that you are a genius and spent lots of time making it, right?

Let me tell you how delicious it turned out: yummmmmmmmyyyyyyyy!!! It was gobbled up in no time and now I do have a new recipe for my future cooking book, if I would ever publish one 🙂 Publishing my own book is a long time dream of mine, so far I keep reading cooking magazines and books, and scribble on paper towels whatever I would like to change in their recipes.

Decadent Chocolate Chip with Cranberry Dunkers Base Cheesecake

Ingredients:

8 oz cream cheese
1 egg
1/4 cup sugar
1/2 tsp vanilla extract
1/3 cup sour cream
12 or so Oatmeal Cranberry Dunkers, or any other type of cookies that have a dash of cinnamon,  cranberries and oatmeal.
1/4 cup semisweet chocolate chips

How to:

  1. Preheat oven to 350*F.
  2. Place the cookies at the bottom of your cooking form. You don’t need any butter, just break them loosely.
  3. Mix together the softened cream cheese, sour cream, sugar, egg, and vanilla. Add chocolate chips and mix.
  4. Spread the mixture over the cookies and bake for about 25-30 minutes.
  5. Enjoy!

As I am posting right now, my baby girl is asking for another cheesecake to be done- it was so good!
