Most Perfect Sour-Cream Chocolate Cake

“Cake, me baking cake? And is the Most Perfect Sour-Cream Chocolate Cake? Perfect, as in the perfect? Are you sure you are talking about me?” My 18-year-old self would never believe that there would be a time when I would be baking or cooking. Not only spending time baking and cooking, but also enjoying it, dreaming about it, making up my own recipes- that would’ve sound to me like a Fairy Tale, absolutely out of the real world and not true. 

When I was growing up, all I wanted to do is read and write, studying, being in school or college forever and a day, not cooking. I was thinking of cooking as a waste of time, as something unnecessary. When I moved to States, I always wondered why people don’t just order food? Why they have to cook? Here in the States, you can find any type of food deliveries, from healthy to not so healthy. It puzzled me!

Until one day the change came! It was late December in 2007 when we were holding our 8 pounds change – our son Danick! We were so captivated by that little bundle: he was, and still is, so perfect! I remember the day I came home with him and my husband and I promised to each other that we will do the best and beyond for him. 

At first, it was the basic things. Then, he grew up and was time to introduce solids to him; and that was the time when I realized that I have to learn how to cook healthy meals for him and us. Very thankful for the internet and cooking sites and forums, I have learned a lot from them, and it helped me avoid many mistakes. That was the moment when I was excited because most of the dishes I was trying to make turned out well and that was it! I started to enjoy cooking! 

Now, I went through some memories, shed some tears, and it’s time to talk about our Most Perfect Sour Cream Chocolate Cake.

Making this cake was very easy: all the ingredients were in the fridge/pantry, and it was a deal of mixing and pouring- that’s all. A very easy process, so, in my opinion, almost effortless cake to make. It would be impossible to mess it up. It doesn’t require any special equipment, just two bowls, spatula, baking pan, and an oven.

I wish my pictures could reflect a small percentage of how beautiful this cake is! Soft and fluffy, with a great chocolate taste. Next time, I will add frosting and some nuts or fruits to see how it will turn out! I am in love with the results!

I decided to decorate it with dried fruits, the fruits I have dehydrated couple of days ago. We are used to see frosting on the cakes, and I wanted to add something else to it! Ingredients:

2 cups all purpose flour
1 3/4 cups granulated sugar
1 cup cocoa powder
2 tsp baking soda
1 tsp salt
pinch of cinnamon (optional)
2 large eggs
1 cup sour cream
3/4 cup olive oil (extra light)
2 tsp vanilla extract
1 cup strong and very hot coffee

Directions:

  1. Preheat your oven to 300*F. Butter and flour a 9×13 baking dish (I used a glass one).
  2. In a large bowl sift and mix toghether all the dry ingredients: flour, cocoa powder, baking soda, cinnamon (if using) and add salt.
  3. In another bowl whisk together eggs, sour ceam, olive oil and vanilla extract until it turns creamy and incorporated.
  4. Add the wet ingredients to the dry ones, and using a spatula work them out until they are all incorporated and look like frosting, pretty thick.
  5. Add the hot coffee to the batter. Using the spatula work it out until it looks all incorporated. It is a fast process, but be careful so you don’t get burned or hurt by the hot coffee.
    6.Pour the batter into the prepared baking dish and bake for 50 minutes, depending on your oven, until a toothpick comes out clean.

This cake is so good that really doesn’t need anything else to compliment it. But you can use your favorite frosting, or just dry fruits like I did.
